C is for… part 2

It seems we have more ‘C’ to share.

Cornflakes Cups

3 cups cornflakes

395g tin of condensed milk

Line a muffin tray with patty cases.

Combine only 2 ingredients ….now how good is that!

Place tablespoons into cases. Drizzle melted chocolate &  refrigerate

For the chocolate:

1/2 cup choc melts

1/2 cup thickened cream

Melt over low heat .

How easy was that! And I can assure you they won’t last long

Chewy Biscuits

250g softened butter

3 cups self raising flour

1 cup sugar

395g condensed milk

Preheat oven to 180. Line 2 baking trays. Cream butter & sugar until pale & fluffy. Sift flour. Pour condensed milk.

Roll into tsp size balls  & lay on tray. Flatten with a floured fork. Bake for about 10-12 mins

TIPS:  * Can be frozen as balls or can be rolled into a log

* Add the zest of a lemon or orange…splendid

* Drizzle with melted chocolate..mmmmm

* Try making them into a sandwich with nutella inside too

Chicken, Yoghurty Schnitzel

4 slices chicken breast

1 cup Parmesan cheese

1 cup fresh breadcrumbs

1 tbs Moroccan spice

1 tbs dried oregano

1 cup yogurt

Preheat oven to 180 & line a baking tray.To a bowl, combine all ingredients, except for the yogurt.

Coat chicken in yogurt, then in mixture. Place on tray & bake for about 30 mins

Serve with a green salad or wedges

Chickpea  & Carrot patties

400g tin of chickpeas, rinsed & drained

80g crumbled fetta

3/4 cup packaged breadcrumbs

1 tbs Moroccan spice

1 grated carrot

chopped coriander

Preheat oven to 180 & line & grease a baking tray. To a food processor, process chickpeas. Remove & add all ingredients, season. Form into patties & bake for about 30 mins. Place in burger bread with hommus or yoghurt & salad

Chimichurri

A traditional Argentinian sauce for barbecued meats. Chimichurri is made from finely chopped parsley, minced garlic, olive oil, oregano, and white or red vinegar. Additional flavorings such as salt, pepper, paprika, cumin, thyme, lemon, and bay leaf may be included. 

Crochet

I can get enough of crocheting. I started this baby blanket last year before we knew if we were having a girl or a boy so these colours were chosen as a safe neutral combination. I only recently finished it and winter is now over.

Cardmaking in Campbelltown

with Amy Tan. We spent a Monday afternoon surrounded by Amy Tangerine products and created a card at Spotlight. Here is my little man with Amy and the card we made.

I have been making cards for ages, can’t remember the last card I bought. Here are a few I have made over the years.
